Ingredients for Pork Chops
- 4 pork chops
- 2 tablespoons olive oil
- 1 tablespoon rosemary
- 2 teaspoons pepper
- 1 teaspoon salt
- 1/2 teaspoon lemon juice
- 1 cup of shredded Brussels sprouts
- 1/2 cup of diced fuji apples
- 1/2 cup of Life's Grape Classic Vine-Dried Grapes
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper
- Combine olive oil, lemon juice, rosemary, salt and pepper in a bowl
- Coat both sides of each pork chop
- Bake for 30-35 minutes (While pork chops are baking, prepare the slaw)
- Wash and shred the Brussels sprouts
- Dice the fuji apples into half inch pieces
- Toss the shredded Brussels sprouts, apples, and vine-dried grapes in a bowl
- In a separate bowl combine olive oil, lemon juice, Dijon mustard, salt and pepper
- Pour dressing over slaw mixture and toss to combine
- Once pork chops are cooked through, remove from the oven and let rest for 5 minutes
- Top with slaw and serve!
