Baked Pork Chops with a Brussels Sprout Slaw

Ingredients for Pork Chops

  • 4 pork chops
  • 2 tablespoons olive oil
  • 1 tablespoon rosemary
  • 2 teaspoons pepper
  • 1 teaspoon salt
  • 1/2 teaspoon lemon juice
Ingredients for Brussels Sprout Slaw
  • 1 cup of shredded Brussels sprouts
  • 1/2 cup of diced fuji apples
  • 1/2 cup of Life's Grape Classic Vine-Dried Grapes
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper
  2. Combine olive oil, lemon juice, rosemary, salt and pepper in a bowl
  3. Coat both sides of each pork chop
  4. Bake for 30-35 minutes (While pork chops are baking, prepare the slaw)
  5. Wash and shred the Brussels sprouts
  6. Dice the fuji apples into half inch pieces
  7. Toss the shredded Brussels sprouts, apples, and vine-dried grapes in a bowl
  8. In a separate bowl combine olive oil, lemon juice, Dijon mustard, salt and pepper
  9. Pour dressing over slaw mixture and toss to combine
  10. Once pork chops are cooked through, remove from the oven and let rest for 5 minutes
  11. Top with slaw and serve!
