Banana Oatmeal Muffins with Peanut Butter Vine-Dried Grapes

  • 1/4 cup packed brown sugar
  • 1/4 cup white sugar 
  • 1/4 cup vegetable oil
  • 1/4 cup almond milk 
  • 1 large eggs
  • 2  mashed ripe bananas 
  • 1 cups all-purpose flour
  • 1/2 cup old fashioned oats
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4teaspoon of vanilla extract
  • ½ teaspoon of xanthum gum 
  • ½ cup of PB covered vine dried grapes 


  1. Preheat oven to 350 degrees F
  2. Grease a muffin tin or add muffin cups
  3. Mash the bananas in a large bowl, then combine the brown sugar, vegetable oil, vanilla, milk and eggs. Mix until combined
  4. In another bowl, combine the oats, flour, xanthum gum, baking powder, baking soda, salt, cinnamon and sugar
  5. Add the dry ingredient to the wet ingredients all at once and stir until combined
  6. Add ½ cup of peanut butter covered vine-dried grapes from Life’s Grape and fold into mixture
  7. Use a spoon to scoop the batter into the muffin cups. Fill ¾ of the way.
  8. Bake for 35 minutes then let cool for 15 minutes
  9. For the peanut butter drizzle on the top of the muffins, put 1 teaspoon of coconut oil into a glass and melt for 10 seconds. Mix in the tablespoon of peanut butter. Lightly drizzle it over the muffins once they have cooled
