Ingredients
- 1/4 cup packed brown sugar
- 1/4 cup white sugar
- 1/4 cup vegetable oil
- 1/4 cup almond milk
- 1 large eggs
- 2 mashed ripe bananas
- 1 cups all-purpose flour
- 1/2 cup old fashioned oats
- 1/2 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4teaspoon of vanilla extract
- ½ teaspoon of xanthum gum
- ½ cup of PB covered vine dried grapes
Directions
- Preheat oven to 350 degrees F
- Grease a muffin tin or add muffin cups
- Mash the bananas in a large bowl, then combine the brown sugar, vegetable oil, vanilla, milk and eggs. Mix until combined
- In another bowl, combine the oats, flour, xanthum gum, baking powder, baking soda, salt, cinnamon and sugar
- Add the dry ingredient to the wet ingredients all at once and stir until combined
- Add ½ cup of peanut butter covered vine-dried grapes from Life’s Grape and fold into mixture
- Use a spoon to scoop the batter into the muffin cups. Fill ¾ of the way.
- Bake for 35 minutes then let cool for 15 minutes
- For the peanut butter drizzle on the top of the muffins, put 1 teaspoon of coconut oil into a glass and melt for 10 seconds. Mix in the tablespoon of peanut butter. Lightly drizzle it over the muffins once they have cooled
