It seems as though summer shouldn't be over, but fall foods are calling our names. This fall salad has the feel of summer with all the hearty ingredients of fall. It's the perfect meal to make to help usher in fall with grace.
Ingredients for the Salad
- 2 cups of fresh spinach
- 1/2 cup Life’s Grape Classic vine-dried grapes
- 1/2 cup cauliflower
- 1/2 cup brussel sprouts, halved
- 1/2 cup sweet potatoes, peeled and cut into bite size pieces
- ½ cup red onion, diced
- ½ cup quinoa, cooked
- ¼ cup goat cheese
- 1 cup olive oil
- 2 tablespoons rosemary
- 1 tablespoon balsamic vinegar
- 1 teaspoon salt
- 1 teaspoon pepper
Ingredients for the Poppyseed dressing
- ¾ cup greek yogurt
- ¼ cup almond milk
- 2 tablespoons cane sugar
- ¼ cup red wine vinegar
- ½ teaspoon dijon mustard
- ¼ teaspoon salt
- 2 tablespoons poppyseed
Instructions for the Salad
- Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper
- Placed your washed and cut vegetables on the baking sheet
- Season with olive oil, rosemary, balsamic vinegar, salt and pepper
- Cook for 30 minutes, allow to cool for 10 minutes
- Once cooled, add to a bowl with 2 cups of fresh spinach and the Classic Vine-Dried Grapes
- Next, add the quinoa and goat cheese
Instructions for the Dressing
- Combine all of the ingredients but the poppyseeds in the blender
- Pulse until smooth and then add to a bowl
- Mix in the poppyseeds and pour over your salad
