It's Taco Tuesday! We decided to mix things up a little bit and put the tequila on the taco instead of on the side. Get ready for a flavor explosion that you never expected!
*This is not a recipe you can whip together one evening. This recipe requires overnight marinating.

Ingredients for the Lamb
- 1 pound of ground lamb
- ⅓ cup orange juice
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 teaspoon black pepper
- 1 teaspoon salt
Ingredients for the Tacos
- ½ cup of Life’s Grape Classic vine-dried grapes
- ¾ cup of tequila
- 12 corn tortillas
- ½ cup Mexican cheese
- ⅓ cup pico de gallo
Ingredients for the Avocado Crema
- 2 ripe avocados, pitted and halved
- 1 cup of plain Greek yogurt
- 2 cloves of garlic, minced
- ¼ cup lime juice
- ¼ cup cilantro
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Add the ground lamb, orange juice and spices to a large bowl
- Cover the bowl and allow the lamb to marinate in the refrigerator overnight
- Place the Classic vine-dried grapes and tequila in a bowl
- Cover and allow them to soak overnight
- The next day remove from the refrigerator
- Drain any remaining liquid from the vine-dried grapes and set to the side
- To make the avocado crema, combine all of the ingredients in a blender or food processor and blend until smooth
- Place the ground lamb in a medium size pan and cook over medium heat for 10-12 minutes
- Lightly warm the tortillas on the stovetop
- Assemble the tacos by adding the cooked lamb, cheese, pico de gallo and tequila soaked vine-dried grapes
- Finally, pour the crema over the tacos and enjoy!
