Oatmeal Vine-Dried Grape Breakfast Bars

Start your new year mornings the right way – with super quick and simple make-at-home breakfast bars. The bars are made with oats, whole wheat flour and are sweetened with honey. They take less than 30 minutes to make, so it’s super easy to prepare these at night and grab them on your way out the door the next morning. Even better, they will last several days, so you don’t even have to think about breakfast because you already got it covered. You can feel good about your mornings with one, two or even three!
Ingredients
- 1 ½ cups old fashioned oats
- 1 ½ cups of whole wheat flour
- 1 teaspoon of baking flour
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- 2 mashed bananas
- ½ cup honey
- 1 teaspoon pure vanilla extract
- 1 cup Life’s Grape Classic Vine-Dried Grapes
- ½ cup unsweetened shredded coconut
Preparation
Preheat oven to 350 degrees and line a pan with parchment paper. While the oven is preheating, in a large bowl mash the bananas then add in eggs, honey, vanilla, and stir. Next, add in oats, flour, baking soda, salt, cinnamon, and stir. Lastly, stir in Life’s Grape Classic Vine-Dried Grapes and coconut. Pour the contents into the prepared pan and bake for 20 minutes.

Sweet and Savory Apple Salad

Whether you’re looking for an easy dinner side dish or a quick lunch option, this sweet and savory salad is a great option to help you stick to your healthy New Year’s resolutions without sacrificing taste. In all, it’ll only take about 15 minutes to prepare and once it’s ready you’ll have a satisfying meal that’s also good for you.
Ingredients
- Dressing
- ½ cup of Greek yogurt
- 2 tablespoons of mayonnaise
- 3 tablespoons of freshly squeezed lemon juice
- ¾ teaspoons kosher salt
- ¼ teaspoons black pepper
- Salad
- 4 cups of baby spinach, rinsed and dried
- 2 stalks of chopped celery
- ¼ cup of thinly sliced onions
- ¼ cup of Life’s Grape Mini Vine-Dried Grapes
- ½ cup of roughly chopped walnuts
- 1 thinly sliced apple
- 1/3 cup of shredded cheddar cheese
Preparation
To make the dressing, whisk together yogurt, mayonnaise, lemon juice, salt, and pepper in a bowl and set aside. For the salad, place spinach, celery, red onion, Life’s Grape Mini Vine-Dried Grapes, walnuts and apple slices in a large salad bowl. Drizzle with dressing and give it a toss. Top off with shredded cheddar cheese.
