Peanut Butter and Banana Bread

Breakfast doesn't have to be just pancakes, toast, oatmeal, or eggs. If you want an easy and quick meal-prep breakfast, this should be your go to. Full of bananas and peanut butter vine-dried grapes, you get a sweet and salty slice of heaven to start your day.

Ingredients

  • 3 bananas
  • 1/3 cup of unsalted butter
  • 1 and 1/4 cup of gluten-free flour
  • 3/4 cup of gluten-free rolled oats
  • 1/2 cup of brown sugar
  • 1/3 cup of granulated sugar
  • 1 teaspoon of baking powder
  • 1/3 cup of eggs whites (or 2 large eggs)
  • 1 teaspoon of vanilla extract
  • Dash of salt
  • 1 tablespoon of  maple syrup
  • 1 tablespoon of cinnamon
  • ½ cup of Life’s Grape peanut butter dipped vine-dried grapes

Directions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Grease the loaf pan
  3. Cut up 3 bananas TIP: To make your banana bread delicious and moist, caramelize your bananas with maple syrup and cinnamon and bake for 15 minutes before adding them to your dry ingredients
  4. Add your flour and rolled oats into a medium mixing bowl
  5. Take bananas out after 15 mins and let cool for 10 minutes before adding to the dry ingredients
  6. Mash up bananas with a fork
  7. Melt butter and stir into bananas, then add to the mixing bowl
  8. Add both sugars, salt, eggs and vanilla extract
  9. Mix everything together in mixing bowl with a spatula until smooth
  10. Then, fold in the peanut butter vine-dried grapes 
  11. Pour batter into greased loaf pan 
  12. Bake for 50 minutes
  13. Take out of the oven and let cool for 20 minutes before cutting into the bread
  14. Can keep for one week in an air-tight container
