To celebrate National Salad Month, we’ve been whipping up light and refreshing salad recipes you can easily whip up for your next summer gathering. Whether you’re hosting your own BBQ, coming as a guest for a potluck, or simply making lunch for the day, here are some of our favorite recipes that you can easily throw together in less than 15 minutes.
Summer Spinach, Apple & Vine-Dried Grape Salad (yummy)
- 2 ½ cups of spinach
- 1 cup cubed Fiji Apples (about 2 small apples)
- 2 teaspoons lemon juice
- 1 teaspoon olive oil
- 2 oz. of Life’s Grape Minis
- ¼ teaspoon coarse salt
- Pinch of ground black pepper
- 2 tablespoons of blue cheese
- Walnuts (optional)
Place rinsed lettuce, Life’s Grape Minis and apples in a large bowl.
Drizzle the lemon juice, olive oil and toss all together. Sprinkle in nuts, salt, and pepper. Toss all together.
Crumble the blue cheese over the salad. Serve immediately.
Kale Salad with Strawberries and Vine-Dried Grapes (Basia’s favorite!)
- 5-6 cups of chopped kale* (chopped into thin strips)
- 1 ½ cup of strawberries, chopped
- ¾ cup of Life’s Grape Classic
- ¼ cup of plain Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1 tablespoon olive oil
- ¼ teaspoon salt
- Almonds (optional)
- Goat cheese (optional)
In a large bowl, add kale, chopped strawberries, Life’s Grape vine-dried grapes and nuts. Mix dressing ingredients in a small bowl or measuring cup until combined.
In a separate small bowl, mix the Greek yogurt, lemon juice, honey, olive oil and salt all together. Stir until completely combined.
Pour the dressing into the salad and mix to combine.
Best served refrigerated 1-2 hours before serving.
*You can also substitute the kale for baby arugula or other dark greens.
Mixed Green Salad with Feta, Vine-Dried Grapes and Almonds (Courtney’s favorite simple lunch)
- 1 bag of Spring Mix lettuce/greens
- 1/3 Feta cheese
- 1/3 cup of Life’s Grape Classic
- 1/3 cup sliced almonds
- 4 thin slices of red onion – sliced in half
- 3 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- Pinch of black pepper
- ½ teaspoon Dijon mustard
- 1 tablespoon honey
Place salad in a bowl.
Crumble the Feta cheese over the salad and add in the Life’s Grape, almonds and red onions.
Mix together the olive oil, balsamic vinegar, black pepper, Dijon mustard and honey in a jar and shake all together.
Drizzle the dressing over salad and toss. Let salad sit at least 10 minutes before serving.
Feel free to make any adjustments to these recipes to your liking whether it’s choosing to make it dairy-free, vegan-friendly or adding some protein.
