- 1/4 cup Life's Grape Classic Vine-Dried Grapes
- 8.8 oz (250g) ricotta
- zest of ¼ lemon
- 2 tsp balsamic vinegar
- 1 small bunch basil , finely chopped
- 4 slices of ciabatta bread
- 1 tsp olive oil
- salt and pepper to taste
Toast bread with a little olive oil in a hot pan or toaster
Add the vine-dried grapes to a bowl and toss with balsamic vinegar and a pinch of salt and pepper. Set aside.
To make the whipped ricotta: add the ricotta and lemon zest and a pinch of salt and pepper to a food processor or blender. Blend until smooth and creamy.
Spread on the toast generously with ricotta and top with soaked vine-dried grapes.
Top with finely chopped basil and serve.
