Whipped Ricotta Toast with Vine-Dried Grapes

Ingredients
  • 1/4 cup Life's Grape Classic Vine-Dried Grapes
  • 8.8 oz (250g) ricotta
  • zest of ¼ lemon
  • 2 tsp balsamic vinegar
  • 1 small bunch basil , finely chopped
  • 4 slices of ciabatta bread
  • 1 tsp olive oil
  • salt and pepper to taste
Instructions
  1. Toast bread with a little olive oil in a hot pan or toaster
  2. Add the vine-dried grapes to a bowl and toss with balsamic vinegar and a pinch of salt and pepper. Set aside.
  3. To make the whipped ricotta: add the ricotta and lemon zest and a pinch of salt and pepper to a food processor or blender. Blend until smooth and creamy.
  4. Spread on the toast generously with ricotta and top with soaked vine-dried grapes.
  5. Top with finely chopped basil and serve.
